New Beginnings?

I haven't posted in almost 7 years! Can you imagine? That said, very little has changed- I am still cooking scrumptious meals and failing to post. These days I try to stick to a ketogenic diet- emphasis on carnivore. it is tough! I lost 20lbs earlier this year, and got even bigger after the summer. I blame it on my new relationship with the most amazing, supportive partner ever!, and Los Vietnamitas Saigon Fried Chicken Tacos. Sigh! I spoke to my health coach, Alex, yesterday and realize I have to change my ways and reset my diet. I am hoping to lose about 15lbs before my birthday on November 1st. I know it is possible. I will be employing intermittent fasting, and sometimes extended fasting, as well as a carnivorous diet. Wish me luck! Eating meat and eggs can be so boring, but I will share any tips I discover with you. Here's to cooking and blogging more? Ovay

Easter Lunch




I cooked easter lunch for family and frieds. From top left to bottom right:
1. Oysters with lemon, a drop of tabasco and rock salt (first time shucking oysters ever! Thanks for the tip, Tom. :)
2. BBQ chicken (I make my own garlicky, hot sauce)
3. Jollof rice ('nuff said LOL)
4. Bacon wraped shrimp, coconut crusted shrimp and scallops with a citrus chilli dip
5. Spare ribs 2 ways- citrusy sweet preparation and dry rub/bbq preparation
6. faux cupcakes made with white chocolate and greek yogurt, topped with malteasers for crunch and garnish

Although stressful, it was a joy to cook for my family and friends. Good food, great company, what more can a girl ask for?

More crappy photos

Beef burgers and caramelized onions

-I tried to hit spicy/hot, sweet and tangy with this burger. I added red hot peppers/atarodo to the burger mix for heat, made some caramelized onions (sweet) and some cocktail sauce. It was so good!


















Cupcakes
I baked 60 of these bad boys for a pool thingy I had at my house... they were gone in an hour. I live for nutmeg so I almost always bake cakes with it. With Baileys ice cream these cakes are orgasfuckingmic!

I hosted a dinner party on my last Friday in Lagos, this was the first course. I got Dedun to eat and enjoy chicken so I think I was successful :)

Crappy photos





1. cinnamon cupcakes with whipped cream and strawberries. Baked these bad boys on Thursday evening, they were heavenly!

2. Meat pie- I seasoned the beef with onions, parsley, ground red pepper, garlic, salt,and maggi cubes. It was delicious, Layide and I finished it in less than an hour.

3.Shrimp cakes, Asian cobb salad and lime aioli. This was totally last minute, just me trying to use ingredients before they went bad.


I don't even want to know how much weight I put on last week *covers face in shame*. Definitely not cooking anything this week.

Fail!

I was supposed to post pictures of dinner on Wednesday, but was too lazy to *covers face in shame*

I cooked jollof rice, plantain and gizzard and spicy beef cubes. It's one of my popular dinners so I'll be making it again very soon. I'll take pictures next time.

I had some leftover shrimp from the chilli-ginger shrimp I made on Saturday evening so I decided to make some shrimp cakes. I served them with an Asian cobb slaw and lime aioli. Yum! I took some pictures with my phone, bad quality but, will be posting pictures regardless.

Yesterday, I baked my first cupcakes. They were delicious! I took pictures with my phone and will be posting them as well.

Dinner with friends

I've decided to cook dinner for a few people tonight. It's really last minute so I'm thinking simple, familiar flavours, definitely not experimenting tonight.

Cooking jollof rice, snails, plantain and gizzard, and peppered beef. Yum! I have some chicken cutlets so I'm thinking panko chicken or honey-garlic chicken. We'll see how it goes. Will post pictures as soon I'm done cooking and plating.
